The two main growing areas are the USA and Iran.
Iranian Pistachios are grown in the cooler parts of the Iranian plateau, planted commercially for hundreds of years but only in the last 80 years been recognised as an agriculture crop for export. The Kernel is darker (more mauve/green) than its US counterpart, has a slightly higher unsaturated oil content and is subsequently more flavoursome, lending itself to roasting and salting in-shell.
USA Pistachios are generally cleaner and brighter in appearance than Iranian and often preferred by processors and manufacturers.
